Bean salad with pineapple

This is a very simple salad with legumes, that provide us iron, very necessary to avoid problems of anaemia.  I have to thanks for this idea to my great friend Ewelina, who is the creator of this salad.  Thanks Ewelina!


INGREDIENTS (for two persons):
- 500 grs. of red beans.
- A piece of leek.
- 100 grs. of gouda cheese.
- 100 grs. of pinneaple.

For the dress:
- Mayonnaise.
- A little curry.

PREPARATION:
- The night before, put into water the beans to soften them.  After it, boil the beans.
- Pick up the gouda cheese, the leek and the pinneaple into pieces.
- Put into the salad bowl the beans.
- Add the picked leek and the gouda cheese.
- Prepare the dressing by mixing the mayonnaise with a little curry.  Remove it and add to the salad bowl.
- Add the pieces of pinneaple. 
- Serve it!

Dry-tomatoes risotto with chicken

First of all, i have to sorry about my absence.  But i regret with two new ones.  Starting with this one, a risotto.  You know that probably is one of my favourites dishes.  And, in this case, i've decided to use dry-tomatoes to obtain a new one.  I hope you like this recipe.


INGREDIENTS (for two persons):
- A glassful of rice.
- 2-3 mushrooms.
- 2-3 pieces of chicken.
- 6-7 units of dry-tomates.
- An onion.
- A quarter glasful of white wine.
- A handful of grated cheese.
- Olive oil.

PREPARATION:
- First of all, you have to dehydrate the dry-tomatoes.
- Once the dry-tomatoes were dehydrated, grind it in a little wine until you obtained a paste of it.  Reserve.
- Cut the chicken and the mushrooms into little pieces.
- Fried up the chicken tighs and the mushrooms into a frying pan.  Retire it. 
- Cut the onion.  Sauté it into a bowl with a little olive oil under a low heat.
- Once the onion were prepared, add the rice and remove it. 
- Once the rice were loose, add the white wine, and remove until the wine were evaporated.
- Add water.  I recommend double quantity of water than rice.  Remove.
- When the rice were prepared, mantain the heat and add the dry-tomatoes paste, removing until it were completely mixed with the rice.
- Retire from the fire and add the chicken and mushrooms pieces.
- To serve, add a little grated cheese.
- Serve it!

Cesar Salad

Today is the moment to review old dishes.  This is my version about the so well knewn césar salad.


INGREDIENTS (2 people):
- Lettuce or a salads bag.
- 2 chicken steaks.
- 1 egg.
- 100 grs. of breadcrumbs.
- Grated cheese.

For the dressing:
- 4 spoonfuls of mayonnaise.
- 2 spoonfuls of olive oil.
- 1 clove of garlic.
- 3-4 spoonfuls of lemon juice.
- A little white pepper.

PREPARATION:

- Put the lettuce (or the salads bag) well washed as the base into the salad bowl.
- Boil the egg.  Once the egg is boiled, pick up in littel pieces and reserve it.
- Pick up the chicken into little pieces, and fry it, until the chicken were well toasted.
- Add the breadcrumbs, the chicken pieces and the egg.
- For the dressing, mix up into a separate recipient the oil, the mayonnaise, the garlic well picked and mashed, the lemon juice and the white pepper.
- Dress the salad withe the mix prepared in the below point.
- Add the grated cheese, remove and serve it.

Mushrooms with ham and honey risotto

Today i share with you a very delicious recipe.  It's a mix of flavours.  In one side, the strong flavour of cheese from a risotto.  In the other hand, the sweet flavour of honey.  It's a delicious dish.  I hope you like it.


INGREDIENTS (2 persons):
- A glassful of rice.
- 2-3 glassful of meat broth.
- 3-4 slices of ham.
- 6-7 slices of goat cheese.
- A handful of grated cheese.
- 4-5 spoonfuls of honey.
- 2-3 mushrooms.
- An onion.
- A quarter glasful of white wine.
- Olive oil.

PREPARATION:

- Cut the slices of ham and put into a frying pan under low heat till the pieces of ham were toasted.  Reserve it.
- Cut into little slices the mushrooms and the onion.  Sauté into a bowl under a high heat with a little olive oil.
- Once the onion and the mushrooms were a little fried, add the rice and remove the mix.  Add the white wine and remove until it was evaporated.
- Get low the heat and add the meat broth in little parts, remove until it was evaporated and so on until the rice was al dente.
- Add to the bowl the pieces of toasted ham, the goat cheese and the honey, and remove until the mix was amalgamated.
- Add the grated cheese, remove and retire from the cook.
- Let stand the rice almost ten minutes.
- Serve it.

Legume hamburguers

As i promise in the last post, here i come with the recipe of the legume hamburguers.  We can accomplish it with a guacamole sausage, as we prepare it here.


INGREDIENTS (3-4 pieces):
- 100 grs. of chipkeas.
- 100 grs. of lentils.
- 2 or 3 pieces of goat cheese.
- A spoonful of grated cheese.
- 20-30 grs. of bread crumb.
- A little spoonful of milk.
- A little spoonful of cumin.
- A little spoonful of red paprika.
- A little parsley.
- A little white pepper.

For the batter:
- An egg.
- A little flour.

PREPARATION:

- Boil the chipkeas and the lentils.  As with other legumes, we must let them the night before in a bowl covered by water to soften them.
- Once the legumes were boiled, dry and put them into a bowl.  Stir the mix to obtain a compact dough.
- Crumble the bread crumbs and put into a frying pan under low heat with a little olive oil, until it were a little toasted.  In that moment, add the cumin and the red paprika and let under heat roughly one more minute.
- Add the mixture of the frying pan to the bowl where we put the legumes.
- At the same mixture, add the pieces of goat cheese, the grated cheese, the parsley well cutted, the milk (it's optional, but if the dough is too compact may be necessary) and a little white pepper.  Stir the mixture with a fork to obtain a compact mixture.
- Now, we have the dough.  To prepare the hamburguers, divide the dough into 3-4 parts, and batter them into the beaten egg.
- Cover the parts with a little flour and fry them into a frying pan with hot oil.
- Enjoy!

Strawberrys with melted brie cheese salad

A very simple and light salad, perfect to accomplish with, in example, croquettes, a steak fillet, ...I hope you like this...


INGREDIENTS:
- Lettuce or a salads bag.
- A tomatoe.
- Roughly ten strawberries.  It's a question of taste.
- 10-15 raisins.
- Brie Cheese.

For the dressing:
- Apple vinegar.
- Olive oil.

PREPARATION:

- Put the lettuce (or the salads bag) well washed as the base into the salad bowl.
- Cut the tomatoe and spread over the lettuce.
- Spread the raisins over the recipient.
- Pick the strawberries up into four pieces, and spread over the recipient.
- For the dressing, we spread a little oil over the recipient, and then, a little apple vinegar.
- In the other hand, cut the brie-cheese into pieces and put into the frying pan until the cheese pieces look toasted.
- Spread the toasted pieces of cheese over the recipient, and remove it over the salad.
- Serve it.

NOTES:
- We can use cherries instead of the strawberries.
